What it is

Skåne Akvavit is a Swedish aquavit brand: a clear spirit flavoured with caraway, anise and fennel and bottled at 38 per cent. It was first presented in 1931 as a milder version of O.P. Anderson and named after Skåne, the southernmost province of Sweden, though it was historically distilled at the state distillery in Sundsvall, far to the north. Since 2021 the brand has belonged to Galatea Spirits. The taste is milder and rounder than the heavier caraway-led styles. Here it is a gentle companion to food rather than a bold statement.

The drink is defined by how it is served. It arrives ice-cold, straight from the freezer or a bucket of crushed ice, poured into a small glass known as a snapsglas. It is taken in one go rather than sipped. The point is not the alcohol but the rhythm of the meal; the cold takes the burn off the spirit and leaves the caraway and the anise.

The ritual of the snapsvisa

The drinking of Skåne Akvavit is never silent. Before every shot, the table gathers for a snapsvisa, a traditional drinking song. These verses are often old and specific to the occasion or even the group present. A crayfish party in August will have its own set of songs, while Midsummer might call for different ones. The singers do not need to know every word; they join in on the chorus, creating a shared moment that marks the transition between courses.

The ritual is bound up with Swedish social life. It happens at crayfish parties, usually held in late August when the freshwater crayfish are in season. It also appears at Midsummer celebrations, Christmas dinners, and other gatherings where a hearty meal is central. The song acts as a pause, a breath, and a signal that the next course is about to arrive.

What goes into it

Skåne Akvavit relies on a simple profile of botanicals on a neutral spirit base. The primary flavour comes from caraway seeds, which provide a warm, earthy note. Anise and fennel add a subtle sweetness and a hint of liquorice that balances the spice. Unlike some other aquavits, Skåne Akvavit does not use heavy spices like dill or coriander in large quantities. It is designed to be gentle, allowing the food it accompanies to remain the star.

The result is a clear liquid that is rarely diluted at the table; the focus is on the balance of flavours rather than strength.

How it is drunk

The drink is most often paired with pickled herring. The sharp, salty tang of the fish cuts through the sweetness of the anise and the warmth of the caraway. Other common accompaniments include boiled new potatoes, butter, and onions. At a crayfish party the herring sits alongside the crayfish themselves, boiled with dill and crown dill and eaten cold with the fingers.

The glass is filled to the brim before the song starts and emptied at the end of the verse, in one motion. Finishing quickly is the form rather than a breach of it.

Curious facts

  • A regional name. Aquavit is drunk across Scandinavia, and Skåne Akvavit borrows the southern province's name for its milder style, but it is a single brand sold throughout Sweden.
  • The song is essential. A meal without a snapsvisa feels incomplete to many Swedes. The verses change by season and by family.
  • Ice is mandatory. Serving the spirit warm or at room temperature is unusual and generally avoided in traditional settings. The cold is part of the experience.
  • A seasonal focus. The drink sees its highest consumption during crayfish season in August and at Midsummer in June, though it remains available year-round.
  • One brand, one blend. Skåne Akvavit is a single product rather than a style: one blend of caraway, anise and fennel, first presented in 1931.

Where to try it

A table in Skåne in August, at a crayfish party held outdoors under paper lanterns, is the setting the drink was made for. The parties are private rather than commercial, but restaurants across the province put on kräftskiva menus through the month and the aquavit comes with them.

Otherwise it is stocked by Systembolaget, the state off-licence, and found behind the bar of any restaurant serving herring and husmanskost. Midsummer in June and the Christmas table in December are the other two points in the year when most of it is drunk.
