Preignac.

Preignac is a small commune in the Sauternes appellation, in Bordeaux within Nouvelle-Aquitaine. Vineyards here grow Sémillon, Sauvignon Blanc, and Muscadelle grapes left on the vine well past normal ripeness, until botrytis, the noble rot, shrivels them and concentrates their sugars into the honeyed, amber wines the appellation is known for. The Garonne river runs along the commune's edge, and the cool, damp mornings it produces help the rot take hold before the afternoon sun dries the vines out again. Away from the vineyards, Preignac keeps a low profile: stone houses, a parish church, and lanes that run straight into the vines. Harvest happens late here, as pickers make several passes through each row to select only the most shriveled, rot-affected grapes. The whole rhythm of the place is built around that patience — wine made to take years before it is ready to drink.
