Bommes.

Bommes is a small commune in the Sauternes appellation of Gironde, surrounded by gravel-and-clay vineyards. It is home to Château d'Yquem, one of the most celebrated estates in the appellation, along with several other classified growths lining the quiet lanes between the village and the Garonne and Ciron rivers. Autumn mists rising off these two rivers encourage Botrytis cinerea, the noble rot that shrivels the grapes and concentrates their sugars, giving Sauternes its intense, honeyed sweetness. Harvest here happens in careful passes through the rows, pickers returning several times to select only the grapes affected by the fungus at the right stage. The result is a wine built on patience and precision, shaped as much by weather and timing as by the winemaker's hand. Stone farmhouses and modest chais sit among the vines, and the rhythm of the village follows the vineyard calendar closely, quiet for much of the year and busiest at harvest. Tastings at the estates show directly how geography, climate, and careful selection combine to produce one of the world's most distinctive sweet wines.
